Joo doesn't use Tackiness Chop on his FH, but Tackifire Drive 1.9 mm with speed glue.
Of course there is no "best defensive paddle", it depends on which kind of defensive style do you play.
For classic defense style with almost no counterattack (like Chtchetinine, Syed), better use a classic defense rubber on FH, like Vari Spin (in 1,5 mm sponge), and the same rubber on BH, or a long pips rubber with rough surface, like Feint Long II (a reference) or TSP Curl P1-R. The blade : better a defense one, like Butterfly Matsushita, Tibhar IV C.
For active defense style with counterattack (like Joo, Chen Weixing, Ding Song), better use a faster blade (all or off-), or a combi blade (Japsko Off/Def, YLT Kameo Combination), a rather fast FH rubber (off- or all+) with 1.8 to 2.0 mm sponge, like Tackifire Drive, Tackifire Special Soft, and a long pips rubber with rough surface on BH, like Feint Long II or TSP Curl P1-R.
