It certainly does depend upon the opponent. At a recreational level, the long, spinny serves work very well. I find that most basement players can't return a long spinny serve to the backhand to save their lives, but they will get a short underspin serve over the net.

However, there is a point you reach where a long, topspin serve is an opportunity. Using a penhold, I find a fast, deep backhand topspin serve to me helps me block back a powerful return without the effort usually required of a penholder.
